Punch Down and Barrel Sampling
Schram Vineyards Winery & Brewery – RESCHEDULED FROM SEPTEMBER 24th! Due to harvest being delayed a week later than we expected, our Punch Down Party sessions will be held on October 1st so that we know we have grapes to punch down! :) We may not use our feet, but we think you’ll love getting your hands dirty as you learn about the “punch down” winemaking process! Winemaker, Aaron Schram, will be giving a tour of the winemaking facility where all the grapes are fermenting post harvest. Aaron will give a quick informative session and tour of the crush pad on what is happening at this stage in the process and why we need to "punch down" the grapes. Those who want to be hands on and “punch down” may register for the experience beforehand: "Punch down" the grapes, sample the pomace and juice and then make your way to the barrel room where Aaron will give a tour of the barrel room and then treat participants to barrel samples of an in-process wine. 1pm or 3pm Festivities will be open for anyone to watch, but if you’d like to participate, please register as space will be limited! What is “punch down,” you ask? When grapes or grape bits are in their fermentation bins after harvesting and de-stemming, all the solid (the grape skins, seeds, stems, pulp) rise to the surface of the bin. This mass of solid matter is called a “cap,” and winemakers want to integrate the cap back into the wine, so that the wine continues to get color and flavor.
